5-Spice lamb chops with stir fried veg and chilli soy dipping sauce

Ingredients / serves 4

  • 8 lamb loin chops
  • 1 tbsp sunflower oil
  • 1 tbsp ground Chinese 5 spice
  • 1 clove garlic, finely chopped
  • 200 g swiss brown mushrooms, thickly sliced
  • 1 bunch bok choy/choy sum, cut into 3cm pieces
  • 1 red capsicum, deseeded and sliced
  • 1 tbsp tamari or low salt soy sauce
  • Dipping sauce
  • 1 long red chilli, deseeded, finely chopped
  • 2 cloves garlic, finely chopped
  • To serve:
  • Brown rice or fresh rice noodles
  • Red chilli, julienne, to garnish

Method

Place lamb chops on a plate, brush with 2 teaspoons oil and sprinkle both sides with 5-spice. Preheat a char grill until very hot and cook lamb for 2-3 minutes each side, rest.

Mix ingredients for dipping sauce in a small bowl.

Heat a wok to very hot, add 2 teaspoons oil and swirl to coat the pan. Add garlic and stir for 5 seconds or until fragrant, immediately add the mushrooms and stir until golden. Add capsicum then the bok choy and toss to combine. Add soy and stir through. Serve immediately with lamb, noodles and dipping sauce.

Essential Tips

  • 1. Make your own 5 spice mix with a blend of star anise, cinnamon, cloves, szechuan pepper and fennel. Feel free to mix it up depending on what you have in the spice cupboard.
  • 2. Try pan frying the lamb instead of char grilling it. Then after cooking the lamb, deglaze the hot pan with a little water, Chinese rice wine (shao xing) and soy sauce, reduce to a sauce and pour over lamb.
  • 3. Use whatever mushrooms you like. Use shitake mushrooms in combination with other mushrooms as they have a stronger flavour.
