Barbecue fajitas with avocado salsa

Fajitas make a super family meal, put the cooked beef and all of the other ingredients in the centre of the table, and let everyone help themselves.

Ingredients / serves 4

  • 600 g beef rump
  • ½ tsp ground chilli
  • ½ tsp dried thyme leaves
  • ½ tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp sweet paprika
  • 2 tsp brown sugar
  • Juice of half a lime
  • ½ bunch fresh coriander, roughly chopped
  • 1 tbsp oil
  • 2 medium capsicums, thinly sliced
  • 1 large red onion, thinly sliced
  • 6 tortillas and green salad, to serve

  • Avocado salsa
  • 2 medium tomatoes, diced
  • 1 Lebanese cucumber, peeled, diced
  • 1 large avocado, peeled, diced
  • ½ small bunch fresh coriander, chopped
  • 2 tsp sweet chilli sauce
  • Juice of half a lime


Cut the beef across the grain into strips of even thickness (approx. 7.5 x 1 x 1cm). Place in a large bowl. Combine all of the spice and the sugar, then sprinkle over the meat. Add the lime juice and coriander to the meat, turning well to coat. Cover bowl, then refrigerate for at least 15 minutes or overnight if possible.
To make Avocado salsa: Combine all the ingredients. tomatoes, cucumber, avocado, coriander, sweet chilli sauce, Juice of half a lime. Refrigerate until required.
To cook the beef, preheat the barbecue plate to hot. Drizzle the beef with half of the oil. Using tongs place the beef over the hot plate, taking care not to crowd it. Turn it once or twice until just cooked. Remove from the heat and keep warm. Add remaining oil to the capsicums and onions, cook on barbecue hotplate, turning them often, until just tender.
To serve, place some of the cooked capsicums and onions on a tortilla, add a pile of spiced meat and a good dollop of salsa. Roll up the tortilla and enjoy with a fresh seasonal salad.
