Beef Olives

The name ‘Beef Olives’ does not have any association with the olives you pick off a tree. Rather, they are delicious little parcels of stuffed beef schnitzel, which, cooked in the slow cooker or oven result in a beautifully tender meal.

Ingredients / serves 4

  • 500 g beef mince
  • 100 g dried breadcrumbs
  • 20 large green olives stuffed with feta

Method

1.
Drain olives well. Roll mince into small balls. Place an olive on each ball and press into centre of ball. Ensuring that mince completely covers olive.

Roll in breadcrumbs.
3.
Heat 10ml oil in large heavy based frying pan over medium heat.
4.
Cook beef olives, for 8-10 minutes, turning frequently until evenly browned and cooked through.

  • Serve with toothpicks
