Cajun lamb ribs with slaw

These saucy lamb ribs are something that everyone will savour.

Ingredients / serves 4

  • 1 kg lamb ribs, skin removed
  • 1 tbsp Cajun spice mix
  • 1 tbsp brown sugar
  • 1 tbsp flaked salt
  • ½ cup quality barbecue sauce
  • 2 tsp sesame seeds, toasted
  • 100 g red cabbage, finely sliced
  • 100 g white cabbage, finely sliced
  • 1 red apple, finely shredded
  • 1 medium carrot, finely shredded
  • 160 g yoghurt
  • 1 tsp lemon juice
  • 4 Desiree potaotes, or similar
  • 100 g sour cream
  • 1 tbsp finely chopped chives


Preheat oven to 160ºC. Mix Cajun spice, brown sugar and flaked salt together in a bowl, then rub into lamb ribs.
For coleslaw, mix cabbage, apple and carrot with yoghurt and lemon juice, then season with salt and freshly ground pepper.
Pour 1 cup of water into a deep roasting tray, add ribs, and cover with foil. Cook for 2.5 hours or until very tender. Place Desiree potatoes onto a foil lined oven tray and place into oven after 30 minutes of cooking the lamb, cook for 2 hours until cooked through and crispy skinned.
Brush lamb ribs liberally with a good barbecue sauce and grill in oven for two to three minutes. Serve sprinkled with toasted sesame seeds. Cut a cross in the top of each potato, squeeze sides slightly to open top out, add sour cream and chives.
