Flavours for butterflied leg of lamb

Ingredients / serves 6

  • 1½ kg leg of lamb, butterflied
  • ¼ cup mirin
  • 2 tbsp fish sauce
  • 1 tbsp sweet chilli sauce
  • ⅓ cup soy sauce
  • 2 cloves crushed garlic
  • 2 tsp grated ginger

Method

1.
Preheat the barbecue plate or grill to hot. Brush the lamb with the combined remaining ingredients on both sides.

Place the lamb on the barbecue, cook for 5 minutes, turn, and cook second side for 5 minutes. Reduce heat to moderate and then close barbecue lid. Brush wirh nay remaining marinade mixture.
3.
Cook for 10 minutes for medium rare, or until cooked to your liking. Test doneness with tongs, rare is very soft, medium rare is soft, medium is springy but soft, and well done is very firm.
4.
Remove lamb, cover it loosely with foil, and rest it in a warm place for 10-20 minutes before carving across the grain.
