Moroccan lamb tagine

A gentle braise of tender lamb, Moroccan spices and vegetables

Ingredients / serves 4

  • 500 g lamb shoulder, diced, trimmed of fat
  • 1 tbsp extra virgin olive oil
  • 1 tbsp ground coriander
  • 2 tsp ground cumin
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • 1 onion, finely sliced
  • 1 tomato, sliced
  • 1 bunch coriander, stems and roots chopped, leaves reserved
  • 4 cloves garlic, chopped
  • ½ preserved lemon, cut into 4 wedges
  • 2 carrots, cut into large pieces
  • 1 x 400g chickpeas, drained and rinsed
  • 2 zucchini, cut into large pieces
  • ¼ cup slivered almonds, toasted, to serve
  • ½ cup fat free natural yoghurt, to serve
  • 100 g couscous
  • 1 tsp extra virgin olive oil
  • 1 tbsp currants
  • 200 ml boiling water


Place lamb in a bowl and toss in oil and spices. Place onion and tomato over the base of a large heavy based casserole dish or tagine. Top with garlic, lamb, chopped coriander roots and stems. Top with preserved lemon wedges, carrot and chickpeas. Add ¼ cup water.
Place over medium heat and bring to the boil, reduce heat to low, cover and simmer for 40 minutes. Add zucchini and cook for 20 minutes or until lamb is tender. When lamb is tender, remove lid and simmer to reduce and thicken the sauce if necessary.
For couscous, place couscous in a heatproof bowl with oil and currants and add 200ml boiling water. Stir and quickly cover with a lid or plate and leave for 5 minutes for liquid to absorb. Fluff couscous gently with a fork.
Serve lamb tagine with couscous, coriander leaves, almonds and yoghurt.

Essential Tips

  • 1. Try fresh lemons in place of the preserved lemon.
  • 2. You can substitute 2 tbsp Moroccan seasoning for the coriander, cumin, cinnamon and ginger. Look for a Moroccan seasoning with no added salt. If salt is added to your spice blend, use 1 tsp only.
