Publisher Hotel's Nanna’s Goat Pie by Daniel Brooks

Ingredients / serves 4

  • 500 g goat mince
  • 100 g butter
  • 1 large carrot, grated
  • 1 large brown onion, grated
  • 1 litre chicken stock
  • 2 tsp flour blended with 60ml water
  • ½ tsp pepper
  • ½ tsp bunch thyme
  • 2 tomatoes, sliced
  • Mashed potato
  • Grated cheese

Method

1.
Melt butter in frying pan. Fry meat until browned (in batches if necessary). Add stock.

Simmer until stock has reduced 90%.
3.
Add carrot, onion, thyme, flour, salt and pepper. Simmer for 5 min, or until thickened.
4.
Place meat in oven proof dish. Cover with tomato slices. Place mash on top of sliced tomato. Sprinkle with grated cheese.
5.
Bake in a moderate oven (180C if fan forced, 190C if not) until potato is golden brown.
