  1. When you are strapped for time and need a quick meal, shop for a beef or lamb dish that you already know and love.
  2. Let the butcher do the work for you. Pre-cut beef or lamb stir-fry strips make a quick braise or stir-fry super quick.
  3. Look out for easy cook cuts like lamb cutlets or beef and lamb steaks.
  4. Mince based or casserole meals can often be cooked and frozen, ready for re-heating when you need a nutritious meal in a hurry.

Tips & Techniques

Cooking tips for barbecuing or pan-frying

  1. Preheat the barbecue, pan or char-grill to before adding the meat.
  2. To keep steaks, chops and cutlets moist and juicy, turn it once only. Cook one side until the first sign of moisture appears on the upper side, then turn to cook the other side.
  3. Rather than timing, test the meat for ‘doneness’ with tongs. Use the blunt end to prod the meat in the thickest part. Rare is soft, well done is very firm.
  4. Remove the meat from heat, loosely cover with foil and rest for 2 minutes to allow the meat fibres to relax and reabsorb their juices before serving.
